I am an AmazonBI Account user and I’d like to add more data (ie, another Region ) to my SPICE datasets (would probably double them size-wise)
Is there a way for me to check how much capacity I have at my disposal?

You can switch to another region > click on datasets > New Dataset . At the top right of the page, it should show you the available capacity.

what about specifically AmazonBI capacity?

SPICE capacity is at account level and that’s the capacity for AmazonBI.
Check the internal Quick Sight onboarding wiki for questions on Amazon BI .
