Currently I have to create datasets manually, But this wont be possible. If no of datasets are increased It is hard to create all of them. I tried to use Quicksight API for creation of dataset but due to dynamic schema of my tables, I wont be able to give column names and types.

Dataset once created in QS. Manually creation should be enough.
If you are using the API then all the columns and data type will be mandatory to provide.
There is no GUI utility if you are looking for right now.
