When I am setting up a datasource/dataset, it allows me to set the Field Name and Description to whatever I want. Can the description I set be accessed when I’m building visualizations?
" After you add metadata to a dataset, field descriptions become available to anyone who is using the dataset. A column description appears when someone who is actively browsing the Fields list pauses on a field name. Column descriptions are visible to people who are editing a dataset or an analysis, but not to someone who is viewing a dashboard."

Correct - the Description is not a variable you can reference in a visual itself (like in the title or legend), but it shows up when an author hovers over that field in the field list in the analysis.
