we would like to know if it is possible to set individual colours for header names or for the full column in tables / pivot tables?

In regards to the headers, this feature is not currently available. You can only set the color on all header fields, not individually.
In regards to a column, you can setup conditional formatting to adjust the color specifically for that column:
