is there a way to refresh the excel data source without removing it then rejoining it back with other data sources in the dataset? the “refresh now” button on the bottom left corner doesn’t refresh the data coming from excel when i click it, it only refreshes the data from sources that are not excel

The most convenient option would be to ingest an updated excel into an S3 bucket and use that S3 bucket as your Data Source in Quicksight to be able to set automatic refreshed on schedule. Check out this link below.
