I have an instance of OpenSearch running in California (us-west-1), and as Quick Sight is not available in that region, the domain does not appear in the add new data source form, what can I do in this case?

I would make sure that if you are using a VPC that you are following the set up instructions [from the documentation](Using Amazon OpenSearch Service with Amazon QuickSight - Amazon QuickSight Sight%20administrator.).
Also, I would go into Manage Quicksight and make sure that in VPC connections that you have OpenSearch checked off.
