When running custom SQL in an analysis, the preview window now shows the data type of every column I am selecting, which makes larger reports very difficult to see - is there any way to turn this off?

Welcome to the QuickSight Community.
I don’t think there is an option to turn that off. It is there basically to allow you to change the data type if required in your dataset.
Clicking on the fields section on the left will give you the list of the columns selected in your SQL. To check out the data you could use a table visual in the Analysis.
