is there a way to see the analytics of dashboards? (Last usage, number of users)
and also the same information at user level? (dashboard used)

Currently, QuickSight does support analytics on dashboard usage and per-user activity. While these insights are not available directly in the base console, you can set them up by combining CloudWatch metrics (for dashboard view counts and load times) with CloudTrail logs (for detailed per-user access tracking).
