Hi @Taylor_Bedard and welcome to the QuickSight community!
While QuickSight switched over to the ‘New Look’ last November, the ‘old look’ was kept as an alternate option while users were able to get acclimated to the new version. I saw on a recent community post that stated the ‘old look’ is no longer being supported and has been removed so this can no longer be done.
