is there a way to add a visual that shows the last them a dataset/analysis was updated?
it. an be a calculated field as well.

From the dataset itself, I sometimes will add a field to return the current date and time (CURRENT_DATE function - Amazon Redshift) and then use that field in a KPI visual or something similar to call out the last refresh date/time. I also have selected a date field that I know changes with each refresh of SPICE or Direct Query and use that field for something similar.
