I have a use case where it would like to add more fields to the size field well and be able to drill down various parameters in order to see the changes in the size of points on a map chart but also keep the color drill-down feature working.
Is there a way to achieve this ?

At the moment the size of the point in maps can be only determined by a single measure as it can be only determined by one value.
If you want to show multiple information in the map points you can use the custom tooltip functionality to achieve a behavior like this:
