This may sound like an obvious question to most but where do I find this information please? I have the SQL queries ready to input I just need to connect. This is something I have not done before. Any pointers etc welcome.

To connect Quick Sight to MySQL, you’ll need to get these details from the database owner/administrator.
I’d suggest contacting whoever provided you access to the datasets. They should be able to share this info with you. Once you have it, you can fill it into the Quick Sight connection form.
