I have dashboards built on datasets. Is there a way that I can change specific field of data manually on the published dashboard and then dashboard will change dynamically? I want to use this function as a what if scenario analysis, to see how the visualization and insights change if original data change.

Welcome to the Quick Sight community!
You cannot directly change dataset values manually on a published dashboard. However, you can create a parameter or a calculated field to simulate changes. Parameters allow users to select values, which can then be used in calculated fields. Calculated fields can be created either in the analysis or at the dataset level.
