Is there any option to create custom hierarchies in dataset level in Quick as in the legacy experience or Arena?

You can setup your hierarchy from the dataset directly as opposed to within your analysis:
Got it @Brett. So we need to switch back to the legacy experience and create a hierarchy, since I don’t see this option in the new Quick experience.

Currently, yes I believe that would be your best option. The new data prep experience still has some limitations in comparison to the legacy version, which can be found here. One of those items is geospatial fields which I would assume leads to the missing hierarchy feature. To my understanding, they are continuing to work on these features with the intent to include them in the new experience as well.
