Noticed that in some of the visualizations, you can only add up to X amount of field wells. Is it possible to have that expanded by ~5-10 fields?

Can you specify which visuals are you wanting to increase the field limit ?
The horizontal 100% chart specifically.
I want to upvote this, there are some dashboards where we need to stack a variety of dynamic measures to achieve the desired visual look
Agreed! Both the pivot and table cap out and I often need more 
The pivot table will soon have increased field limits, launching soon in Q4 2022
