A lot of fields (not all) have had their formatting set back to default visually but their options are still selected to what they are:

I have the data formatting set at the field list level rather than the visual level. I have tried changing the formatting at the field list level and back and it doesn’t update all the visuals the fields are used in. I am having to go through each visual and each field and alter the formatting their.
Is something anyone has come across before? Or is this more of a bug for AWS Support?

I have created a case with AWS support who have observed the issue at hand. They also confirmed having another similar report (unsure if you have reported it or not).
The last update after our call was ‘I have further escalated your use case to our Quick Sight service team to get more insight on this issue and I will let you know when I have an update.’
I started to fix some fields until I realised how time consuming it will be to go through every visual on every tab on every analysis. I will post any updates I have here if you haven’t got your own case open.
I’m experiencing the same issue. All my Analyses and Dashboards suddenly lost their formatting.
I have over 500 calculated fields that were formatted as currency using the Field Prefix option (since I use the Brazilian Real, which is not available as a default currency format in Quick Sight). Now, everything has been reset.
This is a critical issue for my reports, and manually reapplying all the formatting is not a viable option.
