The option to have incremental refresh is not available for datasets that are created with the “new experience”.
Does anyone know if it will every be made available or is this feature that will stay active only for old datasets?

The plan is to eventually have all features int he new experience. Take a look at this FAQ:

@Mike34 We do plan to support all the legacy features in the new experience. We will continue adding the legacy features as more customers can benefit from the new data prep experience.
