I added the Latest Refresh timestamp as an insight in my dashboard
Is there a way to remove the white space around “Latest Refresh: …”?

Are you using Free Form or Tiled layout? If you are using Free Form you can go into the Display Settings on the Properties menu and remove the background and borders.
If you are in Tiled you might be able to do this by updating your Theme settings:
