Is there a way I can easily view the sql generated by QuickSight ?
For example I was to see the sql run against the database from the dashboard or analysis

You will need to be an owner / viewer of the datasource and an owner of hte dataset to be able to see it. It will also need to be a dataset that is custom SQL.
Once you have those permissions you can click on edit dataset and then, once you’re in the edit GUI you can click on the drop down to edit the SQL query which you will be able to see the SQL query.

@Tomas_Martinez , You can see all the SQL executed within your database - they are logged in Query monitoring/Query recent history options . Also take a look at this post.
