I created a heatmap with X and Y axis that are string variables (Categories), but the color of the map is calculated based on a sum value of a numerical variable (Z). In Visuals, I select sort by Z, descending for every row, column and value. However, the heatmap axis change alphabetically and not according to Z.

I just tested out a similar scenario and I see what you mean. In my example, even when I open the ‘sort by’ option, there’s a check next to my ‘sales’ field but still sorting alphabetically instead.
I’m not sure if this is a bug or just a current limitation within Quick Sight’s heat map visuals.
So I’ll mark this as a feature request to promote visibility to the support team.
Additionally, feel free to create a support ticket in case this is a bug as opposed to a limitation:
