If you have a dimension on your pivot table, your users will be able to expand and collapse fields and rows using the “+” and “-” buttons highlighted in the screenshot below:
If you don’t want to add dimensions or you would like to remove the fields entirely from your visual your best options is probably using Free Form layout and Rules to hide and show different visuals depending on a users selection from a parameter control.

I’m sorry about the late reply. You can add them to the Column field well below Rows.
